Slow Roasted Tomato Recipe by Cherry
This is a beautifully easy way of preparing slow roasted vine tomatoes. It does take a little time but if you remember to put these in the oven to bake at the start of your prep time you’ll be very pleased with the result. Sweet tasting, whole and unbroken. If you can mange to keep them stuck to the vine throughout the cooking process they’ll look magnificent on white crockery.
I put these Vittoria vine toms in to my oven drizzled in EV Olive Oil and a few good grinds of the black pepper mill and left them for about 90 mins on 150c.
I then served them with some baked cod and puy lentils but they are wonderful as part of a big plate, a pasta dish or tapas.
