Dressing for the Occasion - How To Make Italian Salad Dressing Recipe by Cherry Menlove

What you will need for this recipe:
  • 230 ml or 1 cup of extra virgin olive oil
  • 5 tablespoons of balsamic vinegar
  • 1 tablespoon of lemon juice - fresh if possible
  • 1 teaspoon of sugar
  • 2 large cloves of garlic - crushed
  • 1 & a half teaspoons of Dijon mustard

The weather here in the South of England has been spoiling us recently and I have been waking up to the sun streaming through my curtains and telling me in the only way that the sun can that it is time to start the day. I have been practising having positive thoughts as the last thing I do before I roll over and enter the land of nod. Over time I have taught myself to be very positive, so I know it can be done, and my latest discipline goes something like.. “tomorrow is going to be a great day. Full of creativity, hard work that doesn’t exhaust and great times with loved ones……….*snort*……..Zzzzzzzzzzzzzz”

It’s working though. That last thought I have at night is more often than not the first thought I have in the morning and it clears my head somewhat. Helps me through the melee AND the to-do list.

ANYWAY, I digress, what I’m really here for (apart from a wee chat, Hello!!) is to give you an awesome recipe and one that I have used for years and years and have not yet grown tired of. It is essentially a salad dressing but I would heartily recommend that you drizzle some on the inside of sandwiches and even on grilled chicken or beef. It’s your flexible friend and can be stored in a jar in the fridge for a good while. But I guarantee you’ll have used it all up before it starts to look a bit ‘off ‘ !!

  • How to make this dressing for all occasions
    Place all of the ingredients into a bottle that you can pop a lid onto and shake well - I used a large empty water bottle. Shake up all of the ingredients and pour into a dressing jar or simply into a pretty glass bowl. Before drizzling over salads or meats give the dressing a little stir with a spoon and cover when you store in the refrigerator.
