Brie and Bacon Pancakes
- Mix up your English style pancake batter in a large bowl and set to one side.
- Grill 6 slices of free range smoked bacon until it is crispy then cut it up into small pieces.
- Thinly slice some brie cheese.
- Using a ladle or a large spoon, pour some of the batter mix onto a pre-heated frying pan with a knob of butter on a high heat.
- Fry the pancake on both sides for 2-3 minutes until both sides have browned slightly.
- Transfer the pancake to a plate and while it is still hot, add some of the chopped bacon and sliced brie to one side of the pancake, then gently roll all the ingredients together to create a wrapped – up feast of yumminess.
- Serve immediately with a huge mug of builders tea.
