Ingredients.
  • 200g of fresh or frozen raspberries
  • 75g icing/confectioners sugar
  • 2 teaspoons of lemon juice

How to Make Raspberry Coulis – the most delicious summertime sauce

In a wee departure to our usual bake fest this week I’m showcasing a sweet sauce that you can put with just about anything. Raspberry coulis is a good thing to know how to make. It can be rustled up in a jiffy turning left-over fruits into something divine and goes well with all sorts of sweet treats from chocolate to meringue.

It can also be used to rescue something that has not turned out the way you wanted it to.

That cake didn’t work out too well for us. It was far too sweet.

However, when we added the coulis it got a whole lot better. The tartness of the raspberries coupled with the lemon juice worked wonders with the coconut in the cake and made it so much more edible. If we had served cream or ice-cream with the cake I just know it would have been too sweet for most people & would have been something I would have simply scraped onto a plate and given to Robert the Husband.

Makes approximately 200ml of coulis, enough for six people to enjoy with a variety of desserts.

How you make it

Put the raspberries in to a blender*

Add the SIEVED sugar and the lemon juice

Whizz it all up and stick your finger in it to taste

Lick your finger and if you think it needs it add another teaspoon of lemon juice

Give it another whizz

Pour the coulis in to a sieve and push it through. This removes the raspberry seeds and makes it nice and smooth

Finally, pour the coulis in to a nice jug & serve with ice-cream, pavlova or even a summer pudding

*If you don’t have a blender then you can do this using a potato masher, fork and a whisk. It may take a wee bit longer but don’t be put off!!!
