- 500g fresh gooseberries
- 160g plain flour
- 150g caster sugar
- 3 medium sized free range eggs
- ¾ cup organic milk
- 40g organic butter
- Pinch of salt
- ¼ teaspoon cinnamon
- 2 teaspoons vanilla sugar
- Pinch of nutmeg

Gooseberry Clafoutis Recipe – “kla – foo – tee”
It’s always rather heartening to make something that you have never made before, with a name that if pronounced incorrectly leaves you looking like a wally, and have it turn out really rather OK. Well, better than OK, it was lovely.
This gooseberry clafoutis was made using pick-your-own gooseberries and a wing and a prayer. I am like many of you – I can chuck a dinner in the oven to cook but struggle with some of the more scientific elements of baking. Who dares wins was the case with this ‘side of the tongue tingly’ concoction and one that I would recommend you try if you want something that takes a few moments and is wonderful on hot, lazy days when served with a very good quality vanilla ice-cream.
- In a large colander wash the gooseberries ensuring that you remove all the stems and flowers.
- Add the gooseberries to the pie dish adding one teaspoon of vanilla sugar and a pinch of nutmeg.
- Using your hands, mix the contents of the pie dish together well making sure all the gooseberries are coated with the sugar and spice, then set them aside.
- In a large mixing bowl mix the flour, sugar, one teaspoon of vanilla sugar and eggs together until smooth, then add the milk, salt and cinnamon.
- Stir together.
- Over a low heat melt the butter and slowly add to the rest of the ingredients ensuring it is mixed well.
- Pour the batter over the gooseberries in the dish and bake in the oven for 45-50minutes.
- Allow to stand for 5 minutes before serving.
