Cheese goes through phases of being in fashion just as much as anything else that we eat, wear or use around the house. Remember when sales of Wensleydale went through the roof after Wallace & Gromit were seen eating it in their Christmas special? And then when they changed allegiance to Stinking Bishop the poor dairy found it hard to cope (or so I’m told). One cheese that has been a real stalwart throughout my family Christmases growing up, and most certainly now, is Stilton.
Stilton is my absolute favourite at this time of year because of its versatility. It can be used in so many dishes that it’s almost a crime to force it to hang out with crackers for the rest of its life.
Here are three ‘quick to rustle up’ dishes that I love and that contain Stilton. And one of them is a fantastically delicious way to use up all of that left over Turkey.
Tagliatele With Stilton, Basil Pine Nuts and Pancetta

Boil the Tagliatelle until is has reached the ‘al dente’ point. Drain and add to a pan, placing on a low heat. Throw in a large handful of Stilton and stir in to the pasta, coating it all.

Add fried pancetta pieces and toasted pine nuts. Serve immediately. Adding a few freshly torn basil leaves before placing it down.
Stilton & Fig Winter Salad

Place mixed salad leaves (rocket, baby spinach, ect..) on a large plate. Slice up 4 figs in to quarters and place around the side of the plate. Sprinkle crumbled Stilton throughout the salad leaves and do the same with a large handful of chopped walnuts.

Finish by adding the tiniest drizzle of olive oil and pieces of thinly sliced ripe pear. Utterly divine and a great way to get your greens at this time of year!
The Ultimate Left Over Turkey Sandwich.
This is the mother of all sandwiches and is a rather good cure for a headache if one has had a few too many Sherries.

Spread three slices of bread with mayo. Place turkey slices on to one of the slices, top with cranberry sauce, slices of Stilton and left over sausage meat stuffing. Place another slice of bread on top of the pile and start all over again thus creating a double sandwich!

Add the top slice of bread and slice in two. Trying your hardest to keep the filling as filling and not decoration for the counter top. You’ll need a napkin with this one but it’s worth it. If only to get rid of the self induced headache.
Stilton.
It always has been a classic and it always will be.
