Cajun Chicken Seasoning Recipe

  • 1/4 teaspoon of salt
  • 1/2 tsp mild chili powder
  • 1/2 tsp ground cumin seeds
  • 2 tsp dried oregano
  • 1/2 cayenne pepper
  • 1/2 tsp dried garlic granules
  • 1/2 tsp allspice
  • 1 tsp ground coriander
  • 1/2 tsp ginger
  • 1/2 tsp ground fennel seeds
  • 1 cardamon pod
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp ground black pepper

Cherry's Cajun Chicken Mix 3 - Cherry Menlove

This is a recipe that came out of a need to use up a pack of chicken that was in the fridge. I didn’t want to freeze it and it needed to be cooked. So I grabbed an empty jar of cajun seasoning, read the ingredients out loud to myself, omitted the crap that they put in to those jars, gathered some herbs and spices from my own cupboard and rustled up my own. It’s gooooood, and it’s not got any crap in it!

Put the chicken thighs and legs in to a baking tray, drizzle with olive oil and sprinklle with the seasoning. Bake in the oven at about 200c for approximately 25 – 30 minutes, turning occasionally. If you can’t find ground ingredients then grind them up yourself using a pestle and mortar. Make sure you grind up small though.

These ingredients will make you a jar of cajun seasoning that will last you at least two months and that’s assuming you have a lot of cajun chicken. Pop the mix in to a glass jar and make sure it’s airtight.
