Fresh Mint & Elderflower Slushie

The hot days of summer can lull you in to a sense of dreaminess. Lying on the grass with the crook of your elbow covering your eyes. Sometimes in the garden, a park or on a sun lounger on the patio. Occasionally it’s nice to have an ice-cream but they can be a bit creamy and I often find I want something that is as interesting to eat as a bowl of Haagen Daz but gives me a nice little kick in the same way that a cool glass of Pimm’s does.

Enter my Fresh Mint & Elderflower Slushie.

Served in Bon Maman jam jars with a spoon on the side.

YOU WILL NEED

15g fresh mint leaves, washed

1 liter ice cubes

6 tbsp fresh lemon juice

5 tbsp caster/superfine sugar

5 tbsp St Germain Elderflower Liqueur (it’s pricy but will last forever and you can use it so many summer drinks and desserts. I found mine in a large supermarke)

Put all of the ingredients in to a blender and blend until the ice is crushed and ‘slushie’ like. I know you know what I mean by that. Spoon in to two chilled jam jars, garnish with fresh elderflower if you have it, mint if you don’t. Serve with a spoon.

I’m waiting for more of the Elderflower to come out before I attempt the cordial but the mint in my garden is getting out of hand and I wanted to use some straight away. I hope you enjoy this as much as we did, it’s fresh, summery and will take you about five seconds to make. Which means you won’t be away from the sun for too long!

    Awesome recipe Cherry! I could do with one of those now…I love the idea of the mint , I have my first batch of cordial steeping :) but now I’m wondering how mint and elderflower cordial would taste….

    Yum that looks fab and such a beautiful colour. I’m so glad you don’t need fresh elderflower for it as none grows near me and i’m not sure i’d end up picking the right thing anyway. I do have mint in the garden though that needs to be put to more than mint tea. Just one question. Is that a litre of water made in to ice cubes? or a jug filled up to the litre mark with ready made ice cubes? Thanks! I will deffo be making this as soon as I can get my hands on the elderflower liquer.
