What you will need:
- 250g Brown Basmati & Wild Rice
- 250g Red Camargue & Wild Rice
- 2 Red onions (thinly sliced)
- 200g Tofu
- 50g Pine nuts/kernels
- 200g Feta cheese (cubed)
- Generous handful of fresh basil
- Generous drizzle of chili oil

This salad will serve 6-8 people
- Start by cooking the two types of rice according to the instructions on the packet
- Drain and set to one side
- Peel and thinly slice the two red onions and fry lightly in some olive oil and splash of balsamic vinegar until the onions have softened.
- Thinly slice the block of tofu and in the same frying pan as the onions, fry the tofu slices for a couple of minutes on each side until they are browned.
- Add the rice, caramelised onions and tofu to a large serving bowl.
- Then add the pine nuts, feta cheese (cubed) and basil and mix all the ingredients together.
- Drizzle the salad with a generous helping of chili oil and serve straight away.
I tried waiting for Robert the Husband to join me for this dish but he was running late……..
….and it was too good not to scoff!
